Beef Short Ribs with Ginger Guava Sauce

Short ribs are one of my favorite cuts of beef and are a family favorite in our house. Cooking them in the pressure cooker makes them feasible for serving any day of the week. I cooked these in my Ninja Foodi, using the “broil” feature at the end to really give the sauce a chance to caramelize the ribs and seal in the flavor. No pressure cooker? No problem! I’ve also shared a simple way to prepare these in the oven. They’ll take a bit longer to cook, but they’re worth the wait.

The sauce used on the short ribs in this recipe is absolutely delicious. Hoisin sauce, guava paste and ginger are the stars here. Whisked with a few additional ingredients to make the perfect “lick-your-fingers” goodness, it’s sure to be a hit on chicken and pork too. Beef Short Ribs with Guava Ginger Sauce

Cooking Time: ~ 40 minutes if cooking in pressure cooker; ~ 2 hrs, 45 minutes if cooking in the oven
Servings: ~ 6

Ingredients:

  • 2 packs bone-in beef short ribs, rinsed and patted dry
  • Kosher salt
  • White/black pepper
  • Garlic powder
  • Onion powder
  • Allspice
  • Five-spice powder
  • Olive Oil
  • 1 cup water
  • Ginger Guava Sauce (see recipe beneath rib preparation)
  • Cilantro, basil, green onions (for finishing)

Preparation (for cooking in a pressure cooker/air fryer combo):

  • Season the ribs on all sides with salt, pepper, and spices – to taste.
  • Turn the pressure cooker onto the “sear” feature. Drizzle in a bit of olive oil. Sear short ribs on each side until browned. Remove ribs from pressure cooker and insert the metal rack. Add in 1 cup of water and place the ribs on the rack.
  • Pressure cook the ribs for 30 minutes, quick release at the end.
  • Brush the ribs with Ginger Guava Sauce (see recipe below the rib preparation). Put the crisper lid on the pot, and broil the ribs for 10 minutes. Top with chopped cilantro, basil, and green onions before serving. Enjoy!

Preparation (for cooking in oven):

  • Heat oven to 300 degrees F.
  • Season the ribs on all sides with salt, pepper, and spices.
  • Heat a little olive oil in a large skillet over medium. Sear short ribs on each side until browned.
  • Remove ribs from skillet and place in a large baking dish. Add a little water to the dish, enough to fill it to about 1/4 inch up the side. Cover the dish with foil and bake for 2 1/2 hours.
  • Remove dish from the oven. Remove the foil and brush the ribs with the Ginger Guava Sauce. Return the dish to the oven and broil, uncovered, for about 5-10 minutes until the sauce has caramelized on the ribs to your liking. Top with chopped cilantro, basil, and green onions before serving. Enjoy!

Ginger Guava Sauce Ingredients:

  • 1/4 cup hoisin sauce
  • 1/4 cup guava paste (I found it in the international foods section of the grocery store)
  • 1 tsp freshly grated ginger
  • 2 TSP soy sauce
  • 1-2 TBSP chili garlic paste (to-taste)

Preparation:

Add all ingredients to a small saucepan over medium-low heat. Whisk until well combined, about 5 minutes. Remove from heat. Serve on beef, chicken, or pork. Enjoy!
