Quick and Easy Egg Roll Bowls

Need a recipe for a quick, healthy, flavorful, and easy-to-make dinner? Give these egg roll bowls a try! This recipe takes all of the flavors inside of an egg roll and serves them rice bowl style. Top it with crispy wonton strips and you’ve got a quick, easy, and deliciously satisfying meal, perfect for weeknights. You can adjust the sauce and seasoning amounts to your liking – yup, this is a “taste-as-you-go” type of meal (which if you’ve been reading my recipes, you know that’s my cooking style!).

Quick and Easy Egg Roll Bowls

Servings: ~6
Cooking Time: ~30 minutes

Ingredients:

  • Jasmine rice, cooked according to package (as much as you need to serve you/your crew!)
  • 1 lb ground pork (could also use ground chicken/turkey or a plant-based protein substitute)
  • Canola oil (approximately 3 tbsp)
  • 1/4 cup chopped onions
  • 2 bags coleslaw mix (try to avoid mixes that contain lettuce, if possible)
  • Sauces (all to taste)
  • White pepper, to taste
  • Toasted sesame oil
  • Crispy wonton strips, for serving
  • Optional: My husband suggests serving this with Chinese hot mustard and plum/duck sauce 😊. I agree, that would be delicious!

Recipe:

  1. In a large wok or pan on medium, cook ground pork until done (no pink showing). Remove from wok and set aside.
  2. Add the canola oil to the wok, heating on medium-high. Add in the onions, cabbage, and a few drizzles of soy sauce. Sauté until veggies are cooked down to your liking, approximately 10 minutes.
  3. Return the pork to the wok. Add in approximately 1/4 cup of the teriyaki sauce (or enough to your liking) plus a couple of tablespoons of the chili garlic sauce. Sprinkle in a little white pepper and stir until well combined. Turn off the heat and drizzle with a little toasted sesame oil.
  4. Serve warm over steamed jasmine rice. Top with crispy wonton strips. Enjoy!
